My Pre-New Years Resolution

Argh. Ok I am going to post this because I am determined to go through with it: I want to go back to eating vegan. *Sigh* ok there it is. The reason I stopped eating vegan in the first place was because I had children, and just couldnt keep up with the work I had to do to make my recipes and simply couldnt afford it where I was living. I know these reasons are cop-outs but there ya go. So I now have two lacto-ovo vegetarian children and my husband who is willing to try anything who is also a vegetarian and my goal to become vegan and try to get them to follow my lead. I know that not many people read my blog but if there are any vegan moms out there who can give me some advice, please feel free to share!

At least now there are so many articles and blogs and info on the internet for someone choosing a cruelty free lifestyle--it may not be as hard as I am anticipating. We will see ;)

~♥~♥~On another topic--yesterday I donated 10% of my earnings from my art sales on Etsy to Blind Cats Rescue and Sanctuary :D THANK YOU to all who bought my art and I'm sure those kitties would say thanks (meow) too!~♥~♥~

I am now going to go e-shopping (is that the word for buying things online?) for some much needed food items that aren't available here in our area, wish me luck!

Since our family is vegetarian, this time of year is always a fun challenge finding a good recipe for Thanksgiving dinner. This year we will be eating homemade pizza as the main dish and Pumpkin Pie Cake for dessert. These recipes are vegetarian NOT vegan so there are cheese, eggs and milk in the recipes. We do buy our eggs only from cruelty free farms and use soy milk for alot of our milk needs but it is just so hard to find an affordable and tasty cheese substitute.

Here is the recipe for Pumpkin Pie Cake. This has got to be the most delicious pumpkin recipe EVER!

1 - 29 oz. can pumpkin puree
1 - 12 fluid oz. can evaporated milk
3 eggs
1 cup white sugar
1/2 tsp. salt
4 teaspoons pumpkin pie spice
1 - ( 18.25 oz.) package yellow cake mix
3/4 cup butter
1 cup chopped walnuts

Preheat oven to 350°F (175 degrees C).
Lightly grease one 9x13 inch pan (preferably metal).

In a large bowl, combine pumpkin, evaporated milk, eggs, sugar, salt, and pumpkin pie spice. Mix well. Pour batter into the prepared pan.

Sprinkle the dry cake mix evenly over the pumpkin mixture. Melt the butter or mararine, and drizzle it over the cake mix. Sprinkle walnuts over the top.

Bake for 55 to 60 minutes, or until done.

Any other vegetarians out there with good Thanks giving recipes?

Awesome Charity

I will be donating 10% of all my monthly art sales to a wonderful and amazing charty called BLIND CAT RESCUE & SANCTUARY, INC. They answer the need for a safe place for blind cats that were deemed unadoptable by regular shelters and were going to be killed just because they are blind. Please take a look at thier website They also have some pretty awesome vidoes on youtube of the kitties that live at thier center playing with each other and enjoying life.

Another way you can help them is by clicking here and voting for them.
